兵庫県南西部の播州産の米と水を使い、力強い酒を造っています。この酒蔵は関西で唯一の鉱山貯蔵庫を持ち、養父市大屋町の史跡明延鉱山坑道内の「明壽蔵」で酒を貯蔵しています。坑道内は一年を通じて温度変化が少なく、酒の長期貯蔵に最適な天然のセラーです。冬に完成した酒は、坑道内でゆっくりと穏やかに熟成され、3年以上寝かせた長期熟成酒もあります。この熟成によって味に深みとまろやかさが生まれるのです。代表的な銘柄のひとつ、「播州一献 純米 超辛口」は、播州産の兵庫夢錦を100％使用し、低温長期発酵もろみで辛口の味わいを演出しています。このお酒は、蕎麦との相性も良いですよ。
